Mimee Sounthone

Thailand Instructor

Mimee is from Luang Prabang, a UNESCO World Heritage site in Laos, and she loves sharing the beauty of nature and culture. With a diploma in Tourism and Hospitality Management and over 10 years of experience leading outdoor activities, she brings energy and excitement to every experience. Her passion for herbs, forest foods, and survival skills makes each lesson an unforgettable adventure, leaving people not just learning but feeling inspired and full of life. Though her formal education is modest, Mimee has gained much of her knowledge through hands-on experience. She’s skilled in cooking, survival techniques, permaculture farming, and living simply and sustainably. She wants to share this practical wisdom with others, helping students connect with nature, themselves, and their culture.

Mimee’s dream of owning an eco-farm came true with Pun Souk Eco Farm, which she runs with her partner. They are turning the farm into a community Learning Center, where people can learn about clean gardening, permaculture, and sustainable living. Mimee is especially passionate about preserving traditional skills, like bamboo craftsmanship, which are disappearing as young people move to the city. Through her farm, she hopes to inspire a new interest in these skills and create a space for older and younger generations to learn from each other while reconnecting with Lao culture. With every lesson, she brings not just knowledge but a lot of positive energy, joy, and inspiration.
